It’s just one of those meals that makes me feel nostalgic. 😊 It’s one of the few dinners I make that doesn’t require any modifications from the way I had it as a kid in order to be meatless.

Made this the other day. Grilled cheese is good with cheddar—and it is, pretty objectively, “better”—but tbh I found myself pining for good ol’ velveeta.

It’s gotta be cheap American cheese slices all the way, baby. I prefer real (rennet-free) cheese for almost any other sandwich, but for a grilled cheese, there’s no competing with Pasteurized Prepared Cheese Product.

“Fuck you, that looks disgusting. Lemme try it to make sure it’s not awful.”

*slurping with mouth full of sandwich*

“Yeah, it’s horrible. You wouldn’t want any of this. In fact, I’m doing you a favor right now.”

“Yeah, I’m crying right now because I ate it, not because it’s gone.”

For realsies, that looks insane and I’m super jealous. I hope it tasted even better than it looked!

I used Campbell’s tomato soup as the base, but I added some extra flavor with dried ground basil and rosemary, and topped it with a sprinkle of parmesan and parsley

I’ve done the Campbell’s thing, I’ve also made it from scratch. Not my jam. But that’s ok! And I’m glad others like it! It certainly a fall comfort food.
