I use the Pin Unpin Tab add-on to be able to pin and unpin browser tabs via a keyboard command (Ctrl + Shift + P).

I noticed that this add-on has the permission “Access your data for all websites”. This seems unnecessary. What permission does this add-on really need?

It does seem unnecessary. A former r/firefox moderator built this one ages ago which works for me: https://addons.mozilla.org/firefox/addon/toggle-pin-tab/
For some reason, the default keyboard command Alt+P, which is Option+P on macOS, did not work for me, but I remembered that there’s a way on about:addons to “manage extension shortcuts”, so I changed it to Shift+Control+P, and now it works.
