it was like 1.5 cups of oil and 4 tablespoons of whipped aquafaba and yes I thought so too but when I dumped it all in the sous chef went all “oh no” and no it did not properly emulsify

there was also like a tablespoon of garlic and tbh I could have just added more garlic and it would have been fine imo

I keep going outside every few hours in the evenings hoping that I’ll see her but it’s just been the other two cats. I really miss her, I wanted to take her with us when we moved even if we couldn’t really afford to, she was so sweet

I never thought she’d warm up to me because for like a month she’d hide under the porch furniture and refuse to eat when I was near, but she suddenly just decided fuck it and would eat next to me and then let me pet her. She looked so fuzzy, like they’re all grey tabbies but her fur was all fuzz lookin’ so you couldn’t see her stripes. She didn’t feel fuzzy though, she felt greasy, kinda gross tbh but i loved petting her

she started to wait outside the door for me and would like literally try to run inside unless I stopped her and I really wish I just let her do it just once, like put my other cats in a room and just let her be a little home invading freak

I keep telling myself my plan to socialize her and the other cats to make them more likely to be taken in worked and someone took her in but idk

Either way I don’t think she’s coming back and tbh it’s really upsetting

the fat one just won’t shut up when she’s hungry, and the little one just eats a little bit and then runs off, so unless I watch her food or put it away the fat one will come steal it, but then the little one runs back and bothers me until I put her fucking food back out again

sometimes i put the food back out and she jumps up and looks at it and runs off! but she WANTS IT OUT

I made a vegan mayonnaise yesterday that was really bad like it was not properly emulsified and idk I was getting really upset and trying not to show it because 1) I don’t like fucking up 2) the sous chef came over trying to fix it and 3) this other woman was using the food processor which for some stupid fucking reason the sous chef wants on a shelf behind me, plugged in, so it is not mobile (before it would be on a shelf in front of me, and anyone who wants to use it could simply say “hey can I grab that real quick” and then fuck off out of my space) so on top of feeling embarrassed for fucking something up I felt very claustrophobic and like I wanted to scream

anyway I thought a 20000 rpm professional blender would just mechanically emulsify it so I just dumped the oil into the blender and let it rip and it did not work

and then the sous chef came over with this explaining like I’m 5 explanation for how emulsions work, as if I didn’t already know, while the dining director is there and I’m just like :| ok

I still kind of don’t understand why it didn’t work, like yes I understand how a fucking emulsion works on a basic chemical and physical level but I have literally made mayonnaises with immersion blenders just stuck into oil/egg yolk and it Works Fine, so like, is it less that I was wrong to rely on the 50000000 rpms of this blender and more that aquafaba is a weak ass emulsifier? i don’t know, i guess it’s both
