I have it set up such that \emdash and \endash are replaced by the appropriate characters. I’ve also recently gotten into \hairsp\emdash\hairsp for all my em dash needs. I also set up my phone to replace a ? and ! directly next to each other in both orders with a ‽ It’s great fun if you care about minute details such as these
